He was born and raised in Matsue City, Shimane Prefecture in 1975.
He trained for five years at a three-star restaurant in Italy and El Bulli, Spain.
After returning to Japan, he worked as a chef for 12 years at restaurants in Tokyo such as “CASCINA CANAMILLA” in Nakameguro and “VINO DELLA PACE” in Nishiazabu.
On February 4, 2019, he opened his own restaurant "Omaggio da Konishi" in his hometown of Matsue City, Shimane Prefecture.
He awarded 3 toques of Gault et Millau in 2021.
HHe awarded 2 toques of Gault et Millau in 2022.
